Zucchini meatball subs are a healthy twist on traditional meatball sandwiches, featuring zucchini-based meatballs in a sub roll.
Ingredients

- 2 medium zucchinis, grated
- 1 pound ground turkey or beef
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 jar marinara sauce
- 4 sub rolls
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Grate the zucchinis and squeeze out excess moisture.
- In a bowl, combine grated zucchini, ground meat, breadcrumbs, Parmesan, parsley, egg, garlic, salt, and pepper.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake meatballs for 25-30 minutes until cooked through.
- Heat marinara sauce in a saucepan.
- Place meatballs in sub rolls and top with marinara and mozzarella cheese.
- Broil the subs in the oven for 2-3 minutes until cheese is melted.
- Serve immediately.
