Description

Zucchini meatball subs are a healthy twist on traditional meatball sandwiches, featuring zucchini-based meatballs in a sub roll.


Ingredients

  • 2 medium zucchinis, grated
  • 1 pound ground turkey or beef
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 jar marinara sauce
  • 4 sub rolls
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grate the zucchinis and squeeze out excess moisture.
  3. In a bowl, combine grated zucchini, ground meat, breadcrumbs, Parmesan, parsley, egg, garlic, salt, and pepper.
  4. Form the mixture into meatballs and place them on a baking sheet.
  5. Bake meatballs for 25-30 minutes until cooked through.
  6. Heat marinara sauce in a saucepan.
  7. Place meatballs in sub rolls and top with marinara and mozzarella cheese.
  8. Broil the subs in the oven for 2-3 minutes until cheese is melted.
  9. Serve immediately.
