Description

A fresh and healthy salad featuring veggie burgers and a variety of vegetables.


Ingredients

  • 2 veggie burgers
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, sliced
  • 1/2 bell pepper, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Cook veggie burgers according to package instructions.
  2. While burgers are cooking, prepare the salad base by combining mixed greens, cherry tomatoes, cucumber, red onion, and bell pepper in a large bowl.
  3. Once veggie burgers are cooked, slice them into strips.
  4. Add the sliced veggie burgers to the salad.
  5. Top with feta cheese and drizzle with balsamic vinaigrette.
  6. Toss gently to combine and serve immediately.

Notes

  • Feel free to add other vegetables of your choice.
  • You can use homemade or store-bought veggie burgers.
