Ingredients

- 2 veggie burgers
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, sliced
- 1/2 bell pepper, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup balsamic vinaigrette
Instructions
- Cook veggie burgers according to package instructions.
- While burgers are cooking, prepare the salad base by combining mixed greens, cherry tomatoes, cucumber, red onion, and bell pepper in a large bowl.
- Once veggie burgers are cooked, slice them into strips.
- Add the sliced veggie burgers to the salad.
- Top with feta cheese and drizzle with balsamic vinaigrette.
- Toss gently to combine and serve immediately.

- Feel free to add other vegetables of your choice.
- You can use homemade or store-bought veggie burgers.
- For a vegan option, omit the feta cheese.
