Description

A vegetarian twist on the classic piccata dish featuring cannellini beans.


Ingredients

  • 1 can of cannellini beans (15 oz)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1/4 cup vegetable broth
  • 2 tablespoons capers
  • Salt to taste
  • Pepper to taste
  • Parsley, chopped for garnish

Instructions

  1. Rinse and drain the cannellini beans.
  2. Heat olive oil in a pan over medium heat.
  3. Add onion and garlic, sauté until softened.
  4. Add the cannellini beans, lemon juice, vegetable broth, capers, salt, and pepper.
  5. Simmer for 10 minutes, stirring occasionally.
  6. Garnish with chopped parsley before serving.
