A vegetarian twist on the classic piccata dish featuring cannellini beans.
Ingredients

- 1 can of cannellini beans (15 oz)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1/4 cup vegetable broth
- 2 tablespoons capers
- Salt to taste
- Pepper to taste
- Parsley, chopped for garnish
Instructions
- Rinse and drain the cannellini beans.
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until softened.
- Add the cannellini beans, lemon juice, vegetable broth, capers, salt, and pepper.
- Simmer for 10 minutes, stirring occasionally.
- Garnish with chopped parsley before serving.
