Description

A hearty and nutritious vegetable beef soup that combines tender beef with fresh vegetables.


Ingredients

  • 1 lb beef stew meat
  • 4 cups beef broth
  • 2 cups carrots, chopped
  • 2 cups potatoes, diced
  • 1 cup celery, chopped
  • 1 cup green beans, trimmed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and cook until browned on all sides.
  3. Add onions and garlic, sauté until soft.
  4. Pour in beef broth and add diced tomatoes.
  5. Stir in carrots, potatoes, celery, and green beans.
  6. Add thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  8. Adjust seasoning if necessary and serve hot.
