Description

A refreshing Tzatziki Chickpea Salad packed with flavor and nutrients.


Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, cucumber, cherry tomatoes, and red onion.
  2. In a separate bowl, mix Greek yogurt, garlic, lemon juice, dill, salt, and pepper.
  3. Pour the yogurt mixture over the salad and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
