A refreshing Tzatziki Chickpea Salad packed with flavor and nutrients.
Ingredients

- 1 can chickpeas, rinsed and drained
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- Salt to taste
- Pepper to taste
Instructions
- In a large bowl, combine chickpeas, cucumber, cherry tomatoes, and red onion.
- In a separate bowl, mix Greek yogurt, garlic, lemon juice, dill, salt, and pepper.
- Pour the yogurt mixture over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.

- Serve with pita bread or on its own.
- This salad can be stored in the fridge for up to 3 days.
