- 1 cup shredded coconut
- Whipped cream for topping
Instructions
- In a saucepan, combine coconut milk, heavy cream, sugar, cornstarch, and salt.
- Heat over medium heat until it starts to thicken, stirring constantly.
- In a bowl, whisk egg yolks and gradually add a small amount of the hot mixture to temper them.
- Return the egg mixture to the saucepan and cook for another 2-3 minutes.
- Remove from heat and stir in vanilla extract and shredded coconut.
- Pour the filling into the pre-baked pie crust.
- Chill in the refrigerator for at least 4 hours.
- Top with whipped cream before serving.
Notes
