Ingredients

  • 1 cup coconut milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • Whipped cream for topping

Instructions

  1. In a saucepan, combine coconut milk, heavy cream, sugar, cornstarch, and salt.
  2. Heat over medium heat until it starts to thicken, stirring constantly.
  3. In a bowl, whisk egg yolks and gradually add a small amount of the hot mixture to temper them.
  4. Return the egg mixture to the saucepan and cook for another 2-3 minutes.
  5. Remove from heat and stir in vanilla extract and shredded coconut.
  6. Pour the filling into the pre-baked pie crust.
  7. Chill in the refrigerator for at least 4 hours.
  8. Top with whipped cream before serving.
