Ingredients

  • 2 tablespoons olive oil

  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 1 tablespoon nutritional yeast (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
  3. Spread the Brussels sprouts on a baking sheet in a single layer.
  4. Roast for 25-30 minutes or until golden brown and crispy.
  5. In a small bowl, whisk together tahini, lemon juice, soy sauce, garlic, and nutritional yeast.
  6. Once the Brussels sprouts are done, remove them from the oven and drizzle the tahini dressing over them.
  7. Toss to combine and serve warm.
