Ingredients

- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup spinach, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until softened.
- Add garlic and cook for 1 minute.
- Stir in sweet potatoes, diced tomatoes, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 25 minutes until sweet potatoes are tender.
- Add spinach and cook for an additional 5 minutes.
- Season with salt and pepper before serving.

- This stew can be stored in the refrigerator for up to 3 days.
- You can add other vegetables like bell peppers or zucchini.
