Description

A hearty and comforting sweet potato stew filled with vegetables and spices.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened.
  3. Add garlic and cook for 1 minute.
  4. Stir in sweet potatoes, diced tomatoes, vegetable broth, cumin, and paprika.
  5. Bring to a boil, then reduce heat and simmer for 25 minutes until sweet potatoes are tender.
  6. Add spinach and cook for an additional 5 minutes.
  7. Season with salt and pepper before serving.

  • You can add other vegetables like bell peppers or zucchini.
