Description

A delicious fusion of street corn flavors and smash burgers in a taco format.


Ingredients

  • 1 lb ground beef
  • 4 taco-sized tortillas
  • 1 cup corn, grilled
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat grill or skillet over medium-high heat.
  2. In a bowl, mix mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper.
  3. Form ground beef into small balls and smash them onto the grill or skillet.
  4. Cook until browned on one side, then flip and cook until desired doneness.
  5. Warm the tortillas on the grill for about 30 seconds on each side.
  6. Assemble tacos by placing a burger patty on each tortilla.
  7. Top with grilled corn and cotija cheese.
  8. Drizzle the mayo mixture over the top.
  9. Serve immediately.
