Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup toasted pecans, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. Cream the softened butter, granulated sugar, and brown sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, mixing just until combined. Fold in the toasted chopped pecans.
  5. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes before transferring to a wire rack.
  6. In a saucepan, combine the brown sugar and unsalted butter over medium heat until melted and smooth. Gradually add the heavy cream, whisking until it comes to a gentle boil. Remove from heat and stir in the vanilla extract.
  7. Once the cakes are cooled, place one layer on a serving plate, drizzle with caramel glaze, add the second layer, and drizzle more glaze over the top and sides.

  • For freezing, wrap the cake tightly in plastic wrap and aluminum foil for up to three months.
