- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup toasted pecans, chopped
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
- Cream the softened butter, granulated sugar, and brown sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, mixing just until combined. Fold in the toasted chopped pecans.
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes before transferring to a wire rack.
- In a saucepan, combine the brown sugar and unsalted butter over medium heat until melted and smooth. Gradually add the heavy cream, whisking until it comes to a gentle boil. Remove from heat and stir in the vanilla extract.
- Once the cakes are cooled, place one layer on a serving plate, drizzle with caramel glaze, add the second layer, and drizzle more glaze over the top and sides.
Notes
- Store the cake in an airtight container at room temperature for up to three days or refrigerate for up to a week.
- For freezing, wrap the cake tightly in plastic wrap and aluminum foil for up to three months.
- Check for doneness by inserting a toothpick; it should come out clean.
