Delicious small batch muffins combining apple and pumpkin with a streusel topping.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1/2 cup diced apple
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/4 cup vegetable oil
- 1 egg
- 1/2 tsp vanilla extract
- 1/4 cup rolled oats
- 2 tbsp butter, melted
- 2 tbsp flour for streusel
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine pumpkin puree, diced apple, sugars, oil, egg, and vanilla.
- Combine wet and dry ingredients, mix until just combined.
- In a separate bowl, mix oats, melted butter, and flour to make streusel.
- Fill muffin cups with batter and top with streusel.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store muffins in an airtight container.
- Can substitute apples with pears.
- Best when served warm.
