Description

Delicious small batch muffins combining apple and pumpkin with a streusel topping.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup pumpkin puree
  • 1/2 cup diced apple
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup rolled oats
  • 2 tbsp butter, melted
  • 2 tbsp flour for streusel

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine pumpkin puree, diced apple, sugars, oil, egg, and vanilla.
  4. Combine wet and dry ingredients, mix until just combined.
  5. In a separate bowl, mix oats, melted butter, and flour to make streusel.
  6. Fill muffin cups with batter and top with streusel.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Store muffins in an airtight container.
  • Can substitute apples with pears.
  • Best when served warm.
