Slow cooker Tuscan Chicken Meatballs are flavorful and tender meatballs cooked in a rich tomato sauce with Italian herbs.
Ingredients

- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
Instructions
- In a bowl, mix ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place meatballs in the slow cooker.
- Pour marinara sauce over the meatballs.
- Add oregano and basil to the sauce.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Serve with pasta or on a sub roll.
Notes
- You can substitute ground turkey for ground chicken.
- Adjust seasoning to your taste.
- Meatballs can be frozen after cooking for later use.
