Description

Slow cooker Tuscan Chicken Meatballs are flavorful and tender meatballs cooked in a rich tomato sauce with Italian herbs.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions

  1. In a bowl, mix ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Place meatballs in the slow cooker.
  4. Pour marinara sauce over the meatballs.
  5. Add oregano and basil to the sauce.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Serve with pasta or on a sub roll.

Notes

  • You can substitute ground turkey for ground chicken.
  • Adjust seasoning to your taste.
  • Meatballs can be frozen after cooking for later use.
