Description
A creamy and cheesy soup made with ground beef and fresh vegetables, perfect for chilly evenings.
Ingredients
Scale
- 1 pound ground beef
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Fresh herbs (like parsley or chives) for garnish
Instructions
- Brown the ground beef in a skillet over medium heat, drain excess fat, and transfer to the slow cooker.
- Add diced onion, carrots, celery, and potatoes to the slow cooker.
- Pour beef broth over the ingredients, stir, and season with Worcestershire sauce, salt, pepper, and Italian seasoning.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours. About 30 minutes before serving, stir in heavy cream and shredded cheddar cheese until melted and creamy.
Notes
- For a dairy-free version, use coconut milk instead of heavy cream and nutritional yeast for a cheesy flavor.
- To make gluten-free, ensure your broth is gluten-free.
- For a thicker soup, mash some of the potatoes before adding the cheese.
