A delightful twist on a classic dish, this Slow Cooker BBQ Meatloaf is packed with flavor and has a moist, tender texture.


Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • ½ cup BBQ sauce, plus extra for drizzling
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, Worcestershire sauce, BBQ sauce, salt, and pepper. Mix everything together until well combined.
  2. Shape the mixture into a loaf, ensuring it’s compact but not too tight.
  3. Carefully place the meatloaf in the slow cooker and brush some extra BBQ sauce on top if desired.
  4. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the internal temperature reaches 160°F.

Notes

  • Let the meatloaf rest for a few minutes before slicing.
  • Store leftovers in the refrigerator for up to 3 days.
  • For freezing, slice the meatloaf first and wrap each slice in foil.
