Instructions
- Prepare the apples by peeling, coring, and dicing them into small chunks. Toss with a bit of cinnamon and sugar.
- Mix the dry ingredients: combine flour, granulated sugar, brown sugar, cinnamon, nutmeg, baking powder, and salt in a large bowl.
- Combine the wet ingredients: beat the eggs, then add melted butter and vanilla extract, mixing until smooth.
- Combine wet and dry ingredients, stirring until just combined.
- Fold in the diced apples until evenly distributed.
- Prepare the slow cooker by greasing it with cooking spray or butter.
- Pour the batter into the slow cooker, spreading it evenly.
- Cover and cook on low for about 4 to 5 hours, or until a toothpick comes out clean.
- Cool for 15-20 minutes after cooking, then carefully remove the cake.
- Dust with powdered sugar if desired.
- Slice and serve warm, optionally with vanilla ice cream.
