  • 2 large eggs

Instructions

  1. Prepare the apples by peeling, coring, and dicing them into small chunks. Toss with a bit of cinnamon and sugar.
  2. Mix the dry ingredients: combine flour, granulated sugar, brown sugar, cinnamon, nutmeg, baking powder, and salt in a large bowl.
  3. Combine the wet ingredients: beat the eggs, then add melted butter and vanilla extract, mixing until smooth.
  4. Combine wet and dry ingredients, stirring until just combined.
  5. Fold in the diced apples until evenly distributed.
  6. Prepare the slow cooker by greasing it with cooking spray or butter.
  7. Pour the batter into the slow cooker, spreading it evenly.
  8. Cover and cook on low for about 4 to 5 hours, or until a toothpick comes out clean.
  9. Cool for 15-20 minutes after cooking, then carefully remove the cake.
