Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cooked sausage, crumbled
- 1 cup shredded cheese
- 2 eggs
- 1/2 cup chopped bell peppers
- 1/2 cup chopped onions
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes until water is absorbed.
- In a skillet, cook sausage until browned.
- Add bell peppers and onions to the skillet and sauté until soft.
- In a separate pan, scramble eggs.
- Combine quinoa, sausage mixture, and scrambled eggs in a bowl.
- Top with shredded cheese.
- Season with salt and pepper.
