Ingredients

  • 1 lb salmon fillet, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1/4 red onion, finely chopped
  • 1 lime, juiced and zested
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine salmon pieces with olive oil, garlic powder, paprika, salt, and pepper.
  3. Place salmon on a baking sheet and bake for 12-15 minutes or until cooked through.
  4. In a separate bowl, mix mango, avocado, red onion, lime juice, and lime zest.
  5. Once salmon is cooked, remove from oven and let it cool slightly.
  6. Serve salmon bites topped with mango avocado salsa and sprinkle with cilantro.
