A heartwarming Rustic Vegetable Beef Stew made in a slow cooker, perfect for chilly evenings and family gatherings.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced
  • 3 stalks celery, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for browning the beef)

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Season the beef chuck cubes with salt and pepper. Brown the beef on all sides and transfer to the slow cooker.
  2. Add the sliced carrots, diced potatoes, chopped celery, chopped onion, and minced garlic to the slow cooker with the beef. Stir to combine.
  3. In a separate bowl, mix the beef broth, tomato paste, dried thyme, and bay leaves. Pour this mixture over the beef and vegetables in the slow cooker.
  4. Add additional salt and pepper to taste. Cover and cook on low for 8-10 hours or on high for 4-6 hours until the beef is tender and the vegetables are cooked through.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm on the stove or in the microwave until heated through.
  • For freezing, place in a freezer-safe container for up to 3 months.
