A heartwarming Rustic Vegetable Beef Stew made in a slow cooker, perfect for chilly evenings and family gatherings.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 medium carrots, sliced
- 4 medium potatoes, diced
- 3 stalks celery, chopped
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons olive oil (for browning the beef)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Season the beef chuck cubes with salt and pepper. Brown the beef on all sides and transfer to the slow cooker.
- Add the sliced carrots, diced potatoes, chopped celery, chopped onion, and minced garlic to the slow cooker with the beef. Stir to combine.
- In a separate bowl, mix the beef broth, tomato paste, dried thyme, and bay leaves. Pour this mixture over the beef and vegetables in the slow cooker.
- Add additional salt and pepper to taste. Cover and cook on low for 8-10 hours or on high for 4-6 hours until the beef is tender and the vegetables are cooked through.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm on the stove or in the microwave until heated through.
- For freezing, place in a freezer-safe container for up to 3 months.
