Description

A delicious roasted tomato sandwich paired with a vegan lemon garlic aioli.


Ingredients

  • 4 slices of whole grain bread
  • 2 large tomatoes, sliced
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup vegan mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Fresh basil leaves

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the tomatoes and place them on a baking sheet.
  3. Drizzle with olive oil, and sprinkle with salt and pepper.
  4. Roast the tomatoes for 20 minutes until soft.
  5. While the tomatoes roast, mix vegan mayonnaise, minced garlic, and lemon juice in a bowl.
  6. Toast the bread slices until golden brown.
  7. Spread the lemon garlic aioli on each slice of bread.
  8. Top with roasted tomatoes and fresh basil leaves.
  9. Close the sandwiches, slice, and serve.
