A delicious roasted tomato sandwich paired with a vegan lemon garlic aioli.
Ingredients

- 4 slices of whole grain bread
- 2 large tomatoes, sliced
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- 1/4 cup vegan mayonnaise
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Fresh basil leaves
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the tomatoes and place them on a baking sheet.
- Drizzle with olive oil, and sprinkle with salt and pepper.
- Roast the tomatoes for 20 minutes until soft.
- While the tomatoes roast, mix vegan mayonnaise, minced garlic, and lemon juice in a bowl.
- Toast the bread slices until golden brown.
- Spread the lemon garlic aioli on each slice of bread.
- Top with roasted tomatoes and fresh basil leaves.
- Close the sandwiches, slice, and serve.
Notes
- Choose ripe tomatoes for better flavor.
- Adjust garlic amount based on your preference.
