Ingredients

  • 1 cup fresh strawberries, hulled and halved
  • 2 tablespoons honey
  • 1 cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 4 slices of bread (your choice)
  • Mint leaves for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the strawberries on a baking sheet and drizzle with honey.
  3. Roast the strawberries in the oven for 15-20 minutes until soft.
  4. In a bowl, combine ricotta cheese and vanilla extract, mixing until smooth.
  5. Toast the bread slices until golden brown.
  6. Spread the whipped ricotta on each slice of toast.
  7. Top with roasted strawberries and garnish with mint leaves.
