  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the sliced carrots with olive oil, salt, and pepper.
  3. Spread the carrots on a baking sheet in a single layer.
  4. Roast the carrots for 25-30 minutes until tender and caramelized.
  5. While the carrots are roasting, whip the ricotta cheese until smooth.
  6. In a small saucepan, heat the honey and red pepper flakes over low heat.
  7. Once the carrots are done, place them on a serving platter.
  8. Spread the whipped ricotta over the carrots and drizzle with the hot honey.
