- 2 tablespoons honey
- 1 teaspoon red pepper flakes
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the sliced carrots with olive oil, salt, and pepper.
- Spread the carrots on a baking sheet in a single layer.
- Roast the carrots for 25-30 minutes until tender and caramelized.
- While the carrots are roasting, whip the ricotta cheese until smooth.
- In a small saucepan, heat the honey and red pepper flakes over low heat.
- Once the carrots are done, place them on a serving platter.
- Spread the whipped ricotta over the carrots and drizzle with the hot honey.
- Serve warm.
