Ingredients

  • 1 bunch asparagus
  • 2 medium zucchinis, sliced
  • 2 medium yellow squashes, sliced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and trim the asparagus.
  3. Slice the zucchinis and yellow squashes.
  4. In a bowl, combine the vegetables with olive oil, salt, pepper, garlic powder, and Italian seasoning.
  5. Toss to coat the vegetables evenly.
  6. Spread the vegetables on a baking sheet in a single layer.
  7. Roast in the oven for 15-20 minutes or until tender and slightly browned.
  8. Remove from the oven and serve warm.
