A simple and flavorful dish of smashed potatoes topped with feta cheese and rosemary.
Ingredients

- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup crumbled feta cheese
- 2 tablespoons fresh rosemary, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- Boil the baby potatoes in salted water until tender, about 15-20 minutes.
- Drain and let them cool slightly.
- Place the potatoes on a baking sheet and gently smash each one with a fork.
- Drizzle with olive oil and season with salt and black pepper.
- Bake in the preheated oven for 20-25 minutes until golden and crispy.
- Remove from the oven and sprinkle with feta cheese and rosemary.
- Return to the oven for an additional 5 minutes to warm the feta.
- Serve hot.
Notes
- Use any small potatoes you prefer.
- Adjust the amount of feta to taste.
- Fresh rosemary gives the best flavor.
