Description

A simple and flavorful dish of smashed potatoes topped with feta cheese and rosemary.


Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup crumbled feta cheese
  • 2 tablespoons fresh rosemary, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the baby potatoes in salted water until tender, about 15-20 minutes.
  3. Drain and let them cool slightly.
  4. Place the potatoes on a baking sheet and gently smash each one with a fork.
  5. Drizzle with olive oil and season with salt and black pepper.
  6. Bake in the preheated oven for 20-25 minutes until golden and crispy.
  7. Remove from the oven and sprinkle with feta cheese and rosemary.
  8. Return to the oven for an additional 5 minutes to warm the feta.
  9. Serve hot.

Notes

  • Use any small potatoes you prefer.
  • Adjust the amount of feta to taste.
  • Fresh rosemary gives the best flavor.
