A healthy and quick meal packed with vegetables and protein-rich quinoa.
Ingredients
Scale
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 bell pepper, chopped
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 1 cup snap peas
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, bring water to a boil and add quinoa.
- Reduce heat and simmer for 15 minutes or until water is absorbed.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté for 1 minute.
- Add bell pepper, broccoli, carrot, and snap peas. Cook for 5-7 minutes.
- Add cooked quinoa and soy sauce. Stir well.
- Season with salt and pepper. Cook for another 2 minutes.
- Serve warm.

- Use any seasonal vegetables you prefer.
- For extra protein, add tofu or chicken.
