Delicious tacos filled with pumpkin pie filling and topped with whipped cream.
Ingredients

- 1 can pumpkin puree (15 oz)
- 3/4 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp salt
- 2 eggs
- 1 cup heavy cream
- 8 taco shells
- Whipped cream for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, salt, and eggs until smooth.
- In another bowl, whip heavy cream until soft peaks form.
- Fold whipped cream into the pumpkin mixture gently.
- Spoon the pumpkin filling into taco shells.
- Place the filled taco shells on a baking sheet and bake for 10-15 minutes.
- Remove from oven and let cool slightly.
- Top with whipped cream before serving.

- Use pre-made taco shells for convenience.
- Adjust spices to taste.
- Serve warm or at room temperature.
