Description

Delicious tacos filled with pumpkin pie filling and topped with whipped cream.


Ingredients

  • 1 can pumpkin puree (15 oz)
  • 3/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 2 eggs
  • 1 cup heavy cream
  • 8 taco shells
  • Whipped cream for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, salt, and eggs until smooth.
  3. In another bowl, whip heavy cream until soft peaks form.
  4. Fold whipped cream into the pumpkin mixture gently.
  5. Spoon the pumpkin filling into taco shells.
  6. Place the filled taco shells on a baking sheet and bake for 10-15 minutes.
  7. Remove from oven and let cool slightly.
  8. Top with whipped cream before serving.

Notes

  • Use pre-made taco shells for convenience.
  • Adjust spices to taste.
