Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 6 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup milk
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add diced sweet potatoes and cook until tender, about 10 minutes.
  4. Add spinach and cook until wilted.
  5. In a bowl, whisk together eggs, milk, salt, and pepper.
  6. Combine the sweet potato mixture with the egg mixture.
  7. Pour the mixture into a greased baking dish.
  8. Sprinkle feta cheese on top.
  9. Bake for 30-35 minutes or until set.
  10. Let cool for a few minutes before serving.
