Description

A creamy and flavorful pistachio custard pie that is easy to make and perfect for dessert.


Ingredients

  • 1 pre-made pie crust
  • 1 cup unsalted pistachios, shelled
  • 2 cups milk
  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Whipped cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, blend the pistachios until finely ground.
  3. In a saucepan, combine milk, sugar, cornstarch, and salt. Cook over medium heat until thickened, stirring constantly.
  4. In a bowl, whisk egg yolks and slowly add the hot mixture to temper them.
  5. Return the mixture to the saucepan and cook for another minute, stirring constantly.
  6. Remove from heat and stir in the ground pistachios and vanilla extract.
  7. Pour the custard into the pre-made pie crust.
  8. Chill in the refrigerator for at least 4 hours or until set.
  9. Serve with whipped cream if desired.
