- 1 pre-made pie crust
- 1 cup unsalted pistachios, shelled
- 2 cups milk
- 3/4 cup sugar
- 3 tablespoons cornstarch
- 4 egg yolks
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Whipped cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, blend the pistachios until finely ground.
- In a saucepan, combine milk, sugar, cornstarch, and salt. Cook over medium heat until thickened, stirring constantly.
- In a bowl, whisk egg yolks and slowly add the hot mixture to temper them.
- Return the mixture to the saucepan and cook for another minute, stirring constantly.
- Remove from heat and stir in the ground pistachios and vanilla extract.
- Pour the custard into the pre-made pie crust.
- Chill in the refrigerator for at least 4 hours or until set.
- Serve with whipped cream if desired.
