  • 1/2 cup breadcrumbs
  • 1 cup pineapple chunks (fresh or canned, drained)

  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, sliced (for garnish)
  • 2 tablespoons sesame seeds (for garnish)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, minced garlic, grated ginger, salt, and pepper. Mix until all ingredients are well incorporated.
  2. Using your hands, shape the mixture into small meatballs, about 1 inch in diameter. Place the formed meatballs on a plate or baking sheet.
  3. In a separate bowl, whisk together the soy sauce and brown sugar until the sugar is dissolved. Add the pineapple chunks to the sauce and stir gently to combine.
  4. Arrange the meatballs in the bottom of the slow cooker. Pour the teriyaki sauce with pineapple over the meatballs, ensuring they are well coated.
  5. Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours, until the meatballs are cooked through and tender.
  6. Once cooked, carefully remove the meatballs from the slow cooker and place them on a serving platter. Drizzle some of the remaining sauce over the meatballs.
