- 4 large eggs
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/2 cup cherry tomatoes, halved
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet over medium heat.
- Add spinach and sauté until wilted.
- Add cherry tomatoes and olives, cooking for an additional 2 minutes.
- Remove from heat and create small wells in the mixture.
- Crack an egg into each well.
- Sprinkle feta cheese on top.
- Season with salt and pepper.
- Bake in the oven for 12-15 minutes or until eggs are set.
- Serve warm.
Notes
- For a spicier version, add red pepper flakes.
- Serve with whole grain bread for a complete meal.
- This dish can be made in individual ramekins for portion control.
