Description

Ingredients

  • 4 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium heat.
  3. Add spinach and sauté until wilted.
  4. Add cherry tomatoes and olives, cooking for an additional 2 minutes.
  5. Remove from heat and create small wells in the mixture.
  6. Crack an egg into each well.
  7. Sprinkle feta cheese on top.
  8. Season with salt and pepper.
  9. Bake in the oven for 12-15 minutes or until eggs are set.
  10. Serve warm.

Notes

  • For a spicier version, add red pepper flakes.
  • Serve with whole grain bread for a complete meal.
