Description

A rich and moist fruitcake filled with dried fruits and nuts.


Ingredients

  • 2 cups mixed dried fruits
  • 1 cup chopped nuts
  • 1 cup unsweetened applesauce
  • 1 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 4 large eggs

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large bowl, mix dried fruits, nuts, applesauce, and brown sugar.
  3. In another bowl, whisk together oil, eggs, flour, baking powder, salt, cinnamon, and nutmeg.
  4. Combine both mixtures and stir until well blended.
  5. Pour the batter into a greased cake pan.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

  • Use your favorite dried fruits.
  • For extra flavor, soak the dried fruits in rum or juice overnight.
