A delicious and unique dish combining roasted Brussels sprouts with the flavors of Mexican street corn.
Ingredients
- Brussels sprouts – 1 pound
- Olive oil – 2 tablespoons
- Salt – 1 teaspoon
- Black pepper – 1/2 teaspoon
- Chili powder – 1 teaspoon
- Mayonnaise – 1/4 cup
- Lime juice – 1 tablespoon
- Cotija cheese – 1/4 cup, crumbled
- Cilantro – 2 tablespoons, chopped
- Hot sauce – to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Trim and halve the Brussels sprouts.
- In a bowl, toss Brussels sprouts with olive oil, salt, black pepper, and chili powder.
- Spread the Brussels sprouts on a baking sheet.
- Roast for 20-25 minutes, until golden brown and tender.
- In a separate bowl, mix mayonnaise, lime juice, and hot sauce.
- Once Brussels sprouts are done, remove from the oven and drizzle with the mayonnaise mixture.
- Sprinkle with Cotija cheese and cilantro before serving.
Notes
- Adjust the amount of chili powder for desired spice level.
- Use fresh lime juice for best flavor.
- Garnish with extra cilantro for presentation.
