Description

A delicious and unique dish combining roasted Brussels sprouts with the flavors of Mexican street corn.


Ingredients

  • Brussels sprouts – 1 pound
  • Olive oil – 2 tablespoons
  • Salt – 1 teaspoon
  • Black pepper – 1/2 teaspoon
  • Chili powder – 1 teaspoon
  • Mayonnaise – 1/4 cup
  • Lime juice – 1 tablespoon
  • Cotija cheese – 1/4 cup, crumbled
  • Cilantro – 2 tablespoons, chopped
  • Hot sauce – to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim and halve the Brussels sprouts.
  3. In a bowl, toss Brussels sprouts with olive oil, salt, black pepper, and chili powder.
  4. Spread the Brussels sprouts on a baking sheet.
  5. Roast for 20-25 minutes, until golden brown and tender.
  6. In a separate bowl, mix mayonnaise, lime juice, and hot sauce.
  7. Once Brussels sprouts are done, remove from the oven and drizzle with the mayonnaise mixture.
  8. Sprinkle with Cotija cheese and cilantro before serving.
