Description

A one-pan meal combining Mexican flavors with chicken, sweet potatoes, and black beans.


Ingredients

  • 1 lb chicken breast, diced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add chicken and cook until no longer pink.
  4. Add sweet potatoes, chili powder, cumin, salt, and pepper. Stir well.
  5. Add black beans and corn. Cook until sweet potatoes are tender.
  6. Garnish with fresh cilantro before serving.

Notes

  • Adjust spices based on your heat preference.
  • Can substitute chicken with turkey or tofu for a different protein.
  • Serve with rice or tortillas if desired.
