Description
A hearty meatloaf served with creamy mashed potatoes and melted cheese.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, chopped
- 1/4 cup milk
- 1 egg
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup shredded cheese
- 2 cups potatoes, peeled and chopped
- 1/4 cup butter
- 1/4 cup sour cream
- 1/4 cup cheese for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix ground beef, breadcrumbs, onion, milk, egg, salt, and pepper.
- Shape the mixture into a loaf and place in a baking dish.
- Bake for 1 hour.
- While the meatloaf is baking, boil potatoes until tender.
- Drain and mash potatoes with butter and sour cream.
- Stir in shredded cheese until melted.
- Remove meatloaf from oven, top with additional cheese, and return to oven until cheese is melted.
- Serve with mashed potatoes.
Notes
- Feel free to add herbs for extra flavor.
- You can use turkey or chicken for a lighter version.
