Description

A hearty meatloaf served with creamy mashed potatoes and melted cheese.


Ingredients

Scale
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, chopped
  • 1/4 cup milk
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup shredded cheese
  • 2 cups potatoes, peeled and chopped
  • 1/4 cup butter
  • 1/4 cup sour cream
  • 1/4 cup cheese for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix ground beef, breadcrumbs, onion, milk, egg, salt, and pepper.
  3. Shape the mixture into a loaf and place in a baking dish.
  4. Bake for 1 hour.
  5. While the meatloaf is baking, boil potatoes until tender.
  6. Drain and mash potatoes with butter and sour cream.
  7. Stir in shredded cheese until melted.
  8. Remove meatloaf from oven, top with additional cheese, and return to oven until cheese is melted.
  9. Serve with mashed potatoes.

Notes

  • Feel free to add herbs for extra flavor.
  • You can use turkey or chicken for a lighter version.
