Description

A hearty and flavorful meatless version of the classic Bolognese sauce, perfect for pasta dishes.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup mushrooms, chopped
  • 1 can (14 oz) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic, zucchini, bell pepper, and mushrooms. Cook for 5 more minutes.
  4. Add crushed tomatoes, tomato paste, oregano, basil, salt, and pepper.
  5. Pour in vegetable broth and stir well.
  6. Simmer for 30 minutes, stirring occasionally.
  7. Serve over your favorite pasta and garnish with fresh basil.

Notes

  • This sauce can be made ahead and stored in the fridge for up to 3 days.
  • It freezes well for up to 3 months.
