A hearty and flavorful meatless version of the classic Bolognese sauce, perfect for pasta dishes.
Ingredients

- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 cup mushrooms, chopped
- 1 can (14 oz) crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup vegetable broth
- Fresh basil for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic, zucchini, bell pepper, and mushrooms. Cook for 5 more minutes.
- Add crushed tomatoes, tomato paste, oregano, basil, salt, and pepper.
- Pour in vegetable broth and stir well.
- Simmer for 30 minutes, stirring occasionally.
- Serve over your favorite pasta and garnish with fresh basil.
Notes
- This sauce can be made ahead and stored in the fridge for up to 3 days.
- It freezes well for up to 3 months.
