Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1 cup grated Parmesan cheese (about 100 g)
  • 8 oz (225 g) fettuccine pasta
  • 1/2 cup sun-dried tomatoes, chopped (about 75 g)
  • 2 cups fresh spinach (about 60 g)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Boil a large pot of salted water and cook the fettuccine pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and pepper. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest before slicing into strips.
  3. In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and Italian seasoning until the cheese is melted and the sauce is creamy. If too thick, add reserved pasta water to reach desired consistency.
  4. Add the cooked fettuccine, sun-dried tomatoes, and fresh spinach to the skillet. Toss until the pasta is well coated with the sauce and the spinach has wilted. Slice the chicken and return it to the skillet, mixing gently.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm in a skillet over low heat, adding a splash of cream or reserved pasta water if needed.
  • For freezing, place in a freezer-safe container and consume within 2 months.
