Ingredients

  • 1 ripe mango, diced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned and cooked through.
  3. Add garlic and ginger, stir for 1 minute.
  4. Add onion and bell pepper, cook until softened.
  5. Add mango and soy sauce, stir to combine.
  6. Season with salt and pepper, cook for an additional 2 minutes.
  7. Serve hot over rice or noodles.
