Ingredients

- 1 cup pumpkin puree
- 1/2 cup Greek yogurt
- 1/2 cup oats
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract

- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, Greek yogurt, honey, eggs, and vanilla.
- In another bowl, combine oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Mix the dry ingredients into the wet ingredients until combined.
- Pour the batter into a muffin tin lined with paper liners.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
