Description
Homemade lobster ravioli served in a rich lemon butter sauce.
Ingredients

- 2 cups all-purpose flour
- 3 large eggs
- 1 cup cooked lobster meat, chopped
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 egg yolk
- 1/4 teaspoon salt
- 1/4 cup unsalted butter
- 1 lemon, juiced and zested
- Salt and pepper to taste
Instructions
- Make the pasta dough by mixing flour and eggs until a smooth ball forms.
- Wrap the dough in plastic wrap and let it rest for 30 minutes.
- Combine lobster meat, ricotta, Parmesan, egg yolk, salt, and pepper in a bowl.
- Roll out the dough into thin sheets.
- Place small mounds of the lobster mixture on the dough sheets.
- Fold the dough over the filling and seal the edges to form ravioli.
- Boil the ravioli in salted water until they float, about 3-4 minutes.
- In a skillet, melt butter and add lemon juice and zest.
- Add cooked ravioli to the skillet and toss gently in the sauce.
- Serve immediately, garnished with extra Parmesan if desired.

- Ensure the pasta dough is thin for better texture.
- Use fresh lobster for the best flavor.
