Description

Homemade lobster ravioli served in a rich lemon butter sauce.


Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup cooked lobster meat, chopped
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg yolk
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter
  • 1 lemon, juiced and zested
  • Salt and pepper to taste

Instructions

  1. Make the pasta dough by mixing flour and eggs until a smooth ball forms.
  2. Wrap the dough in plastic wrap and let it rest for 30 minutes.
  3. Combine lobster meat, ricotta, Parmesan, egg yolk, salt, and pepper in a bowl.
  4. Roll out the dough into thin sheets.
  5. Place small mounds of the lobster mixture on the dough sheets.
  6. Fold the dough over the filling and seal the edges to form ravioli.
  7. Boil the ravioli in salted water until they float, about 3-4 minutes.
  8. In a skillet, melt butter and add lemon juice and zest.
  9. Add cooked ravioli to the skillet and toss gently in the sauce.
  10. Serve immediately, garnished with extra Parmesan if desired.
