Description

Delicious shortbread cookies infused with lemon and lavender.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 2 tablespoons dried lavender
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and powdered sugar.
  3. Add flour, dried lavender, lemon zest, salt, and vanilla extract; mix until combined.
  4. Form the dough into a log and wrap in plastic wrap. Chill for 30 minutes.
  5. Slice the log into 1/4-inch thick rounds and place on a baking sheet.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Let cool on a wire rack before serving.

Notes

  • You can adjust the amount of lemon zest for more or less flavor.
