Description

Ingredients

  • 4 to 6 pieces of bone-in, skin-on chicken thighs
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 medium zucchini, sliced into half-moons
  • 2 bell peppers, sliced into strips (any color)
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)

Instructions

  1. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  2. In a small bowl, combine lemon juice, minced garlic, rosemary, thyme, and whisk in olive oil.
  3. Marinate the chicken in the lemon herb mixture for at least 30 minutes.
  4. Prepare the summer vegetables by combining zucchini, bell peppers, and cherry tomatoes in a bowl, drizzling with olive oil, and seasoning.
  5. Layer the marinated chicken in the crockpot and top with the prepared vegetables.
  6. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is tender and vegetables are soft.
